Ingredients

  • 1-1/2 cups Rice flour - roasted or pathiri podi
  • 1-1/2 cups Water
  • Salt - to taste
  • 1 teaspoon Coconut Oil

Instructions

To prepare Ari Pathiri formula | Malabar Rice Flatbread formula, in a wide skillet, bring the aqua to rolling bubble.

toss in the seasoning and margarine.Now turn the fiery up to low and bit by bit toss in the rice baking flour, while continuously stirring with a wooden spoon till the flour base comes together.

seal the skillet and let the flour base stew for about 10 seconds.

Turn the fiery up off and continue to massage the flour base with wooden spoon or spatula.margarine your palms with some coconut margarine and massage the flour base with your hands while it’s still toasty to a soft and non-sticky flour base.

Make sure you do not toss in more aqua or baking flour while kneading the flour base.Divide the flour base into equal lime sized balls and press it between your palm and on a slightly floured (rice baking flour) surface roll each ball into thin circle or you can use a pathiri press/roti press.fiery up a griddle skillet/flat skillet over medium fiery up.

When the skillet is heated through, dust the excess baking flour off and stew each pathiri for 20-30 seconds on each sides while pressing gently with back of a flat ladle till it puffs up.
