bubble the potatoes for 15 mins or until soft.

strain, then mash.

toasty the dairy liquid and half the margarine in the corner of the skillet, then beat into the mash, along with the wholegrain mustard.

Gently skillet-fry the spring onions in the remaining margarine for 2 mins until just soft but still a perky green.

Fold into the mash and dish up.
