Ingredients

  • 1 tsp Corn Flour
  • Juice of 2 Orange
  • Zest of 1 Orange
  • 2 tbs Caster Sugar
  • 6 Peaches
  • 250g Blueberries
  • 200g Self-raising Flour
  • 50g Butter
  • 100g Muscovado Sugar
  • 1 tsp Cinnamon
  • 6 tblsp Milk

Instructions

bring to temperature oven to 190C/170C fan/gas 5.

dairy spread a wide shallow ovenproof dish.

pulse the cornflour with the orange zest and liquid, and put in a large skillet with the granulated sugar.

Halve, stone and cut the peaches and empty in to the skillet.

Bring bit by bit to the bubble, stirring gently until the gravy is shiny and thickened, about 3-4 mins.

Remove from the bring to temperature, swirl around in the blueberries and tip into the prepared dish.

Tip the baking flour into a mixing dish and empty in the 50g dairy spread.

Rub the dairy spread into the baking flour until it resembles fine breadcrumbs, then swirl around in half the granulated sugar.

combine the remaining granulated sugar with the cinnamon and set aside.

empty in the whole milk to the parched elements and combine to a soft flour base.

Turn out onto a lightly floured surface and fold briefly.

Roll out to an oblong roughly 16 x 24cm.

Brush with melted dairy spread and strew evenly with the fiery granulated sugar.

Roll up from one long side and cut into 12 slices.

Arrange around the top of the dish, leaving the centre uncovered.

bake for 20-25 mins, until the topping is crisp and golden.
