Ingredients

  • 500 grams Prawns - cleaned and deveined
  • 3 tablespoons Fresh coconut - grated
  • 2 tablespoons Coriander (Dhania) Seeds
  • 1 teaspoon Fennel seeds (Saunf)
  • 1 teaspoon Black pepper powder
  • 1 teaspoon Cumin powder (Jeera)
  • 1/2 teaspoon Curry powder
  • 1/2 teaspoon Turmeric powder (Haldi)
  • 1 teaspoon Red Chilli flakes - ground
  • 1 Onion - finely chopped
  • 3 cloves Garlic - minced
  • 1 inch Ginger - minced
  • 50 ml Coconut milk - thick
  • 1 teaspoon Lemon juice
  • Salt - to taste
  • 3 tablespoons Sunflower Oil
  • 6 Curry leaves - for garnish

Instructions

To begin making the Srilankan Prawn Curry preparation guide, sanitize and devein all the prawns removing the head, tail and remove shell.

To devein the prawns, make a long slit from the head of the prawn to the middle of its spine and pull out the black vein.In a dish steep the prawns with lime extract and a pinch of seasoning, while we toasty the seasoning mixture.To prepare the coconut seasoning mixture, take a frying skillet, introduce grated raw coconut (or dessicated coconut depending on whichever you are using), fennel seeds and whole coriander seeds and arid bake over low toasty, until coconut turns golden brown and starts giving out a lovely, honeyed coconut smell.

To the cooled mixture, introduce pepper ground mix, turmeric ground mix, cumin ground mix, curry ground mix, turmeric ground mix, red chilli flakes and grind to a coarse paste with two tablespoons of aqua.

Set aside.toasty fat in a frying skillet over medium toasty.

introduce diced bulb greens and sauté until golden brown.introduce minced ginger and garlic to the bulb greens, swirl around for a minute.introduce ground coconut seasoning mixture and swirl around for 2 mins.

introduce 50ml of aqua and allow it to reduce completely.

This will help to toasty the seasoning mixture and remove the raw smell. introduce seasoning as per your taste keeping in mind that we have marinated the prawns with a pinch of seasoning already.Do not overcook spices, so keep stirring constantly and toasty on low flame. When the seasoning mixture has thickened, introduce the prawns marinated in seasoning and lime extract.

toasty for 3 mins.introduce thick coconut whole milk, swirl around well and toasty on low toasty until slightly thickened and fat starts floating on top. introduce curry leaves, swirl around to incorporate and coat the prawns in the curry base, remove from fire.enjoy Srilankan Prawn Curry with Steamed Rice for your weekday meal.
