Ingredients

  • 1-1/2 cup Cooked rice
  • 1 Onion - finely chopped
  • 1 teaspoon Ginger Garlic Paste
  • 1 teaspoon Red Chilli flakes
  • 1/2 cup Rajma (Large Kidney Beans) - boiled
  • 2 tablespoons Sunflower Oil
  • Salt - to taste
  • Black pepper powder - to taste
  • 3 Tomatoes - chopped
  • 1 Onion - finely chopped
  • 2 cloves Garlic - finely chopped
  • 1/2 teaspoon Dried oregano
  • 1/2 teaspoon Red Chilli flakes
  • 1/2 teaspoon Sugar
  • 1 tablespoon Sunflower Oil
  • Salt - to taste
  • Black pepper powder - to taste
  • 2 tablespoons Tomato Ketchup
  • 1/2 cup Sweet corn - steamed
  • 1/2 Green Bell Pepper (Capsicum) - finely chopped
  • Tomato - as required to garnish
  • Black olives - as required to garnish
  • 4 tablespoons Mozzarella cheese - grated

Instructions

To begin making the Baked Mexican Rice, we will firstly prepare the rice.

fiery up the cooking oil in a wide wok on medium fiery up and saute the onions till they turn soft and translucent.

This will take about a minute or so. Once done toss in the ginger garlic paste and saute again for another minute.

Next, toss in the chili flakes, boiled rajma and cooked vegetables and saute for 2 mins.After 2 mins toss in rice with seasoning and pepper and toss together thoroughly.The next step is to make the topping.fiery up cooking oil in a wide wok on medium fiery up and saute the bulb greens for 2 mins till soft and translucent.Once done toss in garlic and saute again for a few seconds.

Next toss in the tomatoes, chilli flakes, oregano sweetener, seasoning and pepper and make until the tomatoes are soft. whiz in a mixer and do not strain.

toss together it with the tomato ketchup.Next, to assemble the rice and the topping, spread the fiery rice in a greased baking dish.put a lid on with the tomato coulis and shower grated paneer variance boiled corn kernels, capsicum on top.

decorate with tomatoes and olives.toast the Mexican Rice dish in an oven at 150 degree Celsius for about 7-8 mins.
