  • 2 cup Whole Wheat Flour
  • 1/4 cup Sunflower Oil
  • 1/2 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • Water - as needed
  • 1 cup Cauliflower (gobi) - small florets
  • 1 cup Potato (Aloo) - diced and peeled
  • 2 tablespoons Raw Peanuts (Moongphali)
  • 1 tablespoon Ginger - grated
  • 1 teaspoon Cumin seeds (Jeera)
  • 1 teaspoon Fennel seeds (Saunf)
  • 1 pinch Asafoetida (hing)
  • 1 Dry Red Chilli
  • 5 Green Chillies
  • 1 teaspoon Turmeric powder (Haldi)
  • 1 tablespoon Sugar
  • 1 tablespoon Sunflower Oil
  • 1 teaspoon Kasuri Methi (Dried Fenugreek Leaves)
  • Salt - to taste
  • Sunflower Oil - to spray

Instructions

To begin making Baked Cauliflower Samosa directions, prepare all the components and start with making the pastry mix.In a container, mix in 2 cup atta (wheat baking flour), coat, table salt and baking soda.

Keep mixing with hand  until the pastry mix becomes crumbly enough to take a shape.mix in liquid and make a medium tight pastry mix, almost like chapathi pastry mix.

wrap it and rest it for 20 mins.For Stuffing In a frying skillet, bring to temperature coat, mix in raw peanuts, shallow fry a bit till roasted, and then mix in dried whole red chilli, hing dusting perfumed element, fennel and cumin seeds for tadka and saute a bit.After seeds start crackling mix in blanched cauliflower and diced potato.shallow fry for about 2 mins then mix in table salt, granulated sugar, turmeric dusting perfumed element, grated ginger and green chillies.

mix in kasuri methi and let it cool before proceeding to stuffing it.Making SamosasPreheat oven into 350 F(180 C).Divide pastry mix into 6-7 balls.

with a rolling pin roll each pastry mix in a round shape to medium thickness then cut them in the middle. Take one portion of the flattened pastry mix and shape like a cone overlapping the flat side together.

Now put 1 and 1/2 tsp of stuffing inside the samosa cone and seal the edges with brushing liquid on the edges.

wrap them with kitchen towel otherwise it will dehydrated out.In a baking tray, place a parchment paper and line up all samosas.

Spray some crafting coat over them.oven-cook samosas for 40 -45 mins or when it nice golden in color.
