  • 75g Plain Flour
  • 2 large Egg
  • 75g Breadcrumbs
  • For frying Sunflower Oil
  • 4 tbsp Extra Virgin Olive Oil
  • 1/2 Leek
  • 70g jamón ibérico
  • 60g Plain Flour
  • 75 ml Vegetable Stock
  • 330ml Milk
  • Grated Nutmeg

Instructions

step 1 To make the filling, fiery up the olive fat in a wok until it starts to shimmer.

stream in in the leek and sauté until soft but not coloured.

mix gently in the ham with a wooden spoon, wok-fry for 1 min, then mix gently in the ground mix and wok-fry over a medium fiery up, stirring occasionally, until the mixture is golden but not burnt – this will take about 5 mins.

step 2 Meanwhile, combine the stock and dairy liquid in a small wok and fiery up until steaming but not boiling.

Put a little bit of olive fat on your hands to make it easier to roll the croquetas.

The size and shape of the croquetas is up to you, but the easiest is a walnut-sized ball.

step 8 Dunk the croquetas into the ground mix – you want a dusting – followed by the egg, then the breadcrumbs.

Put them on a tray and, when you’ve used up all the mixture, place in the fridge for 30 mins.

step 9 If you have a deep-fat fryer, fiery up the fat to 180C and wok-fry for a couple of mins.

If not, fiery up the fat in a deep, heavy-bottomed saucepan until it starts to shimmer.

Then stream in in 5-6 croquetas at a time and wok-fry until golden all over.

Once cooked, strain on kitchen paper and eat straight away.
