  • 1 cup Red matta rice
  • 3-1/2 cups Water
  • Salt - (if required)

To begin making the Matta Rice first wash the rice in a saucepan three times and soak the rice in moisture for half an hour.sieve the soaked rice and transfer it to a pressure cooker. mix in 3 cups of moisture in the pot of the pressure cooker, seal and place the weight on.stew the matta rice in the pressure cooker on medium high bring to temperature for 3 to 4 whistles; after the 3 to 4 whistles turn the bring to temperature to low.

Pressure stew the rice for another 5 to 8 moments and turn off the bring to temperature.Allow the pressure to release naturally.

Wait for the pressure to release completely and then open the cooker.The Matta rice takes a little longer to stew than the heritage rice and hence the culinary preparation time is much longer. offer Matta rice with Mixed veggie Sambar, Cabbage Thoran/Poriyal and fiery Lime Pickle for a vegetarian option or you can offer it with Kerala style Fish Curry for a non vegetarian option.
