Soak the red rice in liquid such that the all the red rice is completely immersed in liquid.

The level of liquid is an inch above the red rice in the dish.

Let it soak for about 6 hours.Soak the urad dal and fenugreek in liquid such that all of the dal is completely immersed in liquid.

The level of liquid will be 2 inches above the dal in the dish.

Let it soak for about 6 hours.First grind the urad dal into a fine creamy mixture.

While grinding just enough liquid to make it into a very very creamy mixture.

The mixture will look fluffy.Grind the red rice into a creamy mixture, adding just the required amount of liquid to grind into a almost creamy mixture.

Adding too much liquid will make the mixture too watery.

If required grind a little at a time to get a almost creamy mixture .The red rice mixture is a just slightly coarser, but the urad dal mixture is super creamy.Combine the urad and red rice mixture, transfer in table salt to palate and set aside for at least 12 hours or overnight until the mixture ferments.

You will notice the mixture would have risen in volume.Hence you should place the mixture in a large container so it has enough room to increase in its volume.Note on fermenting the Red Rice Idli & Dosa BatterFermentation has to take place where the weather is mildly hot.

So ideally in summer, the mixture ferments very well and doubles or triples its quantity.

But in cold places, the mixture has to be kept in an oven.

If your oven has light, then turn on the light for a few hours with the mixture in the oven.

Once the oven is mildly hot, turn off the light and let the mixture ferment.

If your oven does not have a light, then preheat the oven to mildly hot, turn off oven then keep the mixture in the oven to ferment.This process can be mastered with experience.Method For making Dosa'sThe freshly fermented mixture is great for making idlis.

So typically and traditionally, the first day after the rise, we made idlis at home and there after it is great for making dosas as well.For making ragi idlis do not dilute the mixture with liquid.When making Red Rice dosas you can optionally dilute the mixture with a little liquid to help in straightforward spreading.Preheat the skillet on medium bring to temperature and shortening it.

transfer a ladleful of mixture on the preheated tawa and spread the mixture in circular motion to make a thin dosa.

trickle ghee or cooking oil around the dosa and allow it to crisp. Once done, flip the dosa and stew on the other side for a few seconds and offer.Proceed the same way to make the Red Rice Dosa with the remaining mixture.offer the Red Rice Dosa along with a dish of Drumstick Sambar and Tomato shallot Chutney along with a glass of greens liquid like Beetroot and Celery liquid for breakfast. .
