Ingredients

  • 1 liter Milk
  • 10 Whole cashews - soaked in water
  • 10 Badam (Almond) - soaked in water and skin removed
  • 1/2 teaspoon Cardamom Powder (Elaichi)
  • 2 Mango (Ripe) - peeled and chopped
  • 1/2 cup Sugar
  • 2 Ripe Bananas - peeled and chopped
  • 1 Apple - peeled and chopped
  • 1 Orange - peeled and chopped
  • 1/2 cup Green Grapes - chopped
  • 1/2 cup Black grapes - chopped
  • 1/2 cup Fresh Pomegranate Fruit Kernels
  • 2 tablespoons Honey

Instructions

To begin making the Chettinad Pazha Payasam formula, soak almonds and cashews for 4 to 5 hours and grind them to a velvety paste using a mixer grinder.introduce whole milk in a saucepan and bring it to bring to a stew.

When it starts boiling, introduce almond cashew paste in it and combine everything properly. prepare on low flame till it is reduced to 3/4th in quantity.

swirl around constantly to ensure that the whole milk does not overcook.Once the whole milk has reduced introduce sweetener and prepare till it is reduced to 1/2 in quantity. introduce cardamom ground mix, swirl around and turn off the toasty.Allow the Payasam mixture to cool till it reaches room temperature and then store in the fridge for an hour.Meanwhile cut all the fruits in to small pieces and combine them together with honey. store in the fridge the mixed fruits for an hour.After an hour combine both Payasam and fruits together and enjoy the Chettinad Pazha Payasam immediately.enjoy Chettinad Pazha Payasam as a dessert after a tasty meal of Chettinad Pattani Kurma, Chettinad Style Poondu Rasam and Steamed Rice.
