250 grams Colocasia root (Arbi) - boiled and peeled
Sunflower Oil - as required
1/2 teaspoon Mustard seeds
1/4 teaspoon Asafoetida (hing)
1 Green Chilli - finely chopped
1 tablespoon Ginger Garlic Paste
1 Onion - finely chopped
1/2 cup Curd (Dahi / Yogurt)
1 teaspoon Red Chilli powder
1/2 teaspoon Turmeric powder (Haldi)
1 teaspoon Coriander Powder (Dhania)
Salt - as required
Water - as required
Coriander (Dhania) Leaves - Few sprigs
Instructions

To begin making the Arbi Ka Saag method, firstly cut the boiled arbi into round shape.

Keep it aside.mildly hot fat in a wok/kadhai.

mix in mustard seeds and asafoetida into the pot.

Let it mildly hot till the mustard seeds crackle.Once it crackles, mix in the ginger garlic paste, green chillies and let it mildly hot for about 2 to 3 moments.After 2 to 3 moments, mix in in the finely finely sliced onions.

Let it mildly hot till the bulb veggie becomes soft and translucent.

mix in all the masala including red chilis dusting seasoning, turmeric dusting seasoning, coriander dusting seasoning and seasoning into the pot.

Let it mildly hot for 4 to 5 moments.Meanwhile, mix in moisture into the curd and fluff up well.

mix in the boiled Karbi and toss together everything properly.Turn the flame low, empty the curd into the pot and swirl around continuously.

put a lid on the lid and let it mildly hot for about 8 to 10 moments.After 8 to 10 moments, switch off the flame and decorate it with the finely sliced coriander.enjoy Arbi Ka Saag with Boondi Raita and Phulkas or Steamed rice for a weekday lunch or dinner.
