  • 1 Carrot (Gajjar) - peeled & chopped
  • 2 tablespoons Roasted Peanuts (Moongphali)
  • 1/4 cup Mint Leaves (Pudina)
  • 1 tablespoon Fresh coconut - grated
  • 1 Onion
  • 1 tablespoon Garlic - chopped
  • 3 Green Chillies
  • Salt - to taste
  • 1 teaspoon Gingelly oil
  • 1 teaspoon Mustard seeds
  • 1 sprig Curry leaves

Instructions

To begin making the Carrot Peanut Chutney, first arid bake the peanuts in a pot, on medium toasty until the skins turn golden brown.Take the pot off the toasty and allow it to cool.

Remove the skin of roasted peanuts.Place the pot back on the toasty and toasty some cooking oil in it.

stream in in mustard seeds and curry leaves and allow them to crackle.stream in in diced bulb veggie, green chilies and garlic to it and saute together.Next, stream in in coconut and swirl around, followed by diced carrot and mint leaves.

prepare for 5 moments on low-medium toasty.Remove from the toasty and allow it to cool.Put all the components from the pot into the mixer jar and grind together to make a velvety paste, adding little liquid.stream in in seasoning to palate and incorporate well and enjoy the Carrot Peanut Chutney with Idli or Dosa.
