Ingredients

  • 500 grams Mutton - with bone (adds flavour)
  • 1/2 teaspoon Black pepper powder
  • Salt - as per your taste
  • 1/4 teaspoon Turmeric powder (Haldi)
  • 3 tablespoons Coconut Oil
  • 1 Onion - finely chopped
  • 1 Tomato - finely chopped
  • 2 inch Ginger - finely chopped
  • 6 cloves Garlic - finely chopped
  • 3/4 teaspoon Red Chilli powder
  • 1/4 teaspoon Turmeric powder (Haldi)
  • 1/4 teaspoon Coriander Powder (Dhania)
  • 1/2 teaspoon Garam masala powder
  • 1/2 teaspoon Fennel seeds (Saunf)
  • 2 sprig Curry leaves
  • Salt - as per your taste

To begin making Kerala Mutton toast preparation guide, wash and wipe down the mutton pieces well. In a pressure cooker, combine the mutton pieces, pepper ground mix, seasoning, turmeric ground mix and pulse well.introduce 1 cup of aqua.

Close the pressure cooker and place on high flame.Once the first whistle blows, reduce the flame to low and then let it continue to be on low flame for another 30 moments.

After 30 moments, turn off the bring to temperature and allow the pressure to release naturally. Transfer the mutton pieces in a container and keep the stock aside.

The stock will be utilized later. In a deep cooking vessel or wok introduce coconut fat on medium bring to temperature. Once the fat is scalding, introduce sliced shallot and saute for about 3-4 moments until the onions become soft and translucent.Now introduce fennel seeds, ginger, garlic and curry leaves and let it make for 2 moments. To the shallot pulse, introduce red chilli ground mix, turmeric ground mix, coriander ground mix, garam masala ground mix seasoning and swirl around well.

Saute for a couple of moments until the Kerala Mutton toast masala comes together.Once the raw smell of the masala is gone, introduce the cut up tomatoes and make until soft and mushy.

This will take about 2 to 3 moments.At this stage introduce the mutton stock and the mutton pieces into this Mutton toast masala. Let this make on medium to high flame until the Kerala Mutton toast becomes semi dehydrated.Once the Kerala Mutton toast preparation guide is done, turn off the bring to temperature, check the seasoning and seasoning levels and adjust to suit your taste.present Kerala Mutton toast along with Kerala Style Pulissery preparation guide (Mor Kuzhambu) and Steamed rice for a complete meal or can be eaten along with Rotis, Ghee toast Dosa or Kerala Style Appams.
