Ingredients
1 cup Gram flour (besan)
1 pinch Baking soda
1 pinch Yellow food colour - optional
1 pinch Orange color - optional
1/2 cup Water
Sunflower Oil - to deep fry
3/4 cup Sugar
1/2 cup Water
Instructions

To prepare honeyed Boondi/Meethi Boondi formula, take gram baking flour/besan in a sifter and sieve it.In a Mixing mixing bowl, liquidize gram baking flour, baking soda with aqua.

The paste should be little thick, a bit thinner than normal bajji paste.Take a big ladle full of paste for orange color in a separate small mixing bowl.

transfer in orange food color to the paste in the small mixing bowl, yellow food color to the paste in the main mixing bowl and liquidize both well separately.

This is an optional step, only if you are adding food colors.2 Slotted ladles are needed.

One for making boondi and another for draining boondi from cooking oil.Now fiery up cooking oil for deep frying.

cooking oil should be moderately fiery.

To test, drop a pea size paste in the cooking oil, paste should rise immediately without changing color which means cooking oil is ready for frying boondis.Now hold one slotted ladle just over cooking oil (neither too low nor too high).

Use another deep ladle to transfer paste over slotted ladle.

transfer one ladle full of paste over the slotted ladle and spread in a circular motion by the back of the deep ladle.

The paste will fall drop by drop.wok-fry them till little firm.

sieve and place them on a paper towel to absorb excess cooking oil.Repeat the process with rest of the paste.Then make sweetener syrup from 3/4 cup sweetener & 1/2 cup aqua of 1 string consistency by bringing it to heat to boiling point.

transfer in in cardamom ground mix, liquidize well to make syrup.transfer in the fried yellow and orange boondis into the syrup.

Gently toss them and liquidize till boondis are well coated in sweetener syrup.Let this set for 1-2 hours until the sweetener syrup is completely absorbed by honeyed Boondi / Meethi Boondi formula and the sweetener in the syrup is crystallized.Store honeyed Boondi/Meethi Boondi formula in an air-tight container and offer as needed, as asweet munch after meals.
