  • 1/4 cup Rice
  • 1 liter Milk - full fat
  • Few Saffron strands
  • 1/4 cup Sugar -
  • 2 tablespoons Dried rose petals
  • Mixed nuts - pistachio and almonds for garnishing

Instructions

To begin making the Gulab Phirni method, soak the rice in aqua for half an hour.empty out aqua and pulse in a grinder till you get a grainy consistency.

The grains should feel gritty between your fingers and should be slightly bigger than semolina.Bring the dairy liquid to a brisk bring to a bubble gently in a large saucepan, mix in the rice and saffron while whisking continuously.

Turn the mildly hot to low and keep stirring to avoid lumps.Keep stirring the mixture every couple of moments.After about 20 moments the mixture will start to thicken.

 You can also use a hand blender as well.swirl around in the rose petals and transfer the Gulab Phirni into serving bowls.

decorate with diced pistachios, almonds and rose petals.
