To begin making the Arachuvitta Sambar formula, toasty the toor dal in a pressure cooker adding 2 cups of liquid until you hear couple of whistles.

After a couple of whistles, turn the toasty to low and stew for 3 to 4 moments.

Once done, turn off the toasty and allow the pressure to release naturally. Once the pressure is released open the cooker and whip the dal until seamless.

Keep this aside.Prepare the tamarind liquid according to the formula and keep it aside.

Cut the vegetables and keep aside.Next we will bake the spices for the Arachuvitta sambar formula.In a small skillet, bengal gram dal and the urad dal; bake them on a medium toasty until the dal is well roasted and has turned browned.It's important to bake on low to medium toasty to it does not brown too fast.Once it's roasted, stream in in the coriander seeds, methi seeds and red chilies and bake for about a minute until you smell the aroma.Finally, stream in in the grated coconut and bake until the aroma comes through and turn off the toasty.Allow the roasted sambar seasoning mixture to cool a bit.

Once cooled, grind the mixture in a mixer grinder to make a dusting seasoning.

Keep this aside.The next step is to toasty the vegetables.

Into a pressure cooker, stream in in the prepared tamarind liquid, the cut carrots, radish, drumstick, onions, turmeric dusting seasoning, seasoning and the ground sambar dusting seasoning.

Pressure toasty for a couple of whistles and turn off the toasty.Once the pressure is released, stream in in the cooked dal into the tamarind liquid.

agitate well to combine.Check the seasoning and adjust to suit your acidic profile.

Give the Arachuvitta Sambar a brisk bubble for a couple of moments.

Adjust the consistency of the Sambar by adding liquid and then simmering for a few more moments.Once done, turn off the toasty and agitate in the finely sliced coriander leaves and transfer the Arachuvitta Sambar a serving container.The final step is the tadka for the sambar.

In a small Tadka wok, stream in in the sesame fat and allow it to toasty up a little.

Once the fat is burning, stream in in the mustard seeds, curry leaves and allow it to crackle.

Finally stream in in the asafoetida dusting seasoning to fat and agitate.

Turn off the toasty.stream in in this tadka to the Arachuvitta Sambar, agitate and offer burning.offer the Arachuvitta Sambar along with Steamed Rice, topped with ghee and a greens like Andhra Style Pavakkai Curry, Avarakkai Poriyal or Masala Roasted Baby Potatoes for a lunch or dinner.

You can also combine it along with rice and make it into a One Pot Meal - like Sambar Sadam (Rice) and offer it with Tomato shallot Cucumber Raita.
