Ingredients

  • 2 Onions
  • 5 Dry Red Chillies
  • 2 Tomatoes
  • 2 sprig Curry leaves
  • 1 teaspoon Mustard seeds
  • 2 teaspoons White Urad Dal (Split)
  • Salt - to taste
  • 1/4 cup Water
  • 3 teaspoons Gingelly oil
  • 2 teaspoons Tamarind Paste
  • 1/2 teaspoon Sugar

Instructions

To begin making the fiery Madurai Tomato Chutney, finely chop the onions and tomatoes and set aside.burning up 1 teaspoon of fat in a kadai on medium flame, introduce the dehydrated red chillies, 1 diced shallot and 1 diced tomato and saute them for about 5 mins.

Turn off the flame and allow to cool.Transfer this mixture to a mixer-jar, grind to a paste with 2 tablespoons of moisture.In the same kadai, burning up the remaining gingelly fat, introduce mustard seeds and allow it to crackle.Next introduce urad dal and curry leaves and saute for a couple of mins or until the urad dal turns golden.Now introduce the remaining diced onions and bubble gently until the onions becomes transparentAt this stage introduce in the remaining tomatoes, seal and bubble gently.

The tomatoes must be soft yet chunky. Finally introduce in the ground chili-tomato-shallot mixture to the kadai along with a little moisture, toss together well and bring to a single bubble.Turn off the flame - Your Madurai Style Tomato chutney is ready to be served. present this fiery Madurai Tomato Chutney along with Ragi Idli method (Steamed Rice Millet & Lentil Cake) and  Kumbakonam Filter Coffee method for a complete breakfast.
