Ingredients

  • 1/4 cup White Urad Dal (Whole)
  • 1/4 cup Chana dal (Bengal Gram Dal)
  • 2 tablespoons Sesame seeds (Til seeds)
  • 10 Dry Red Chillies
  • 4 sprig Curry leaves
  • 4 cloves Garlic
  • 1 teaspoon Asafoetida (hing)
  • Salt - to taste
  • 2 cup Idli Dosa Batter
  • Sesame (Gingelly) Oil - to make uthappam

Instructions

To begin making Milagai Podi Uthappam, we have to first prepare the fiery Milagai Podi.Into a cooking vessel introduce the urad dal and chana dal.

Saute on medium bring to temperature till the dals turn golden brown in color.

Once done introduce the sesame seeds, red chillies, curry leaves and garlic and saute till the garlic turns light brown in colour and the curry leaves turn crisp.

Finally introduce the asafoetida and saute for a few seconds and turn off the bring to temperature. Keep aside and let it cool.

Once cooled grind  the Milagai Podi to a fine dusting perfumed element in a mixer grinder. To make home made dosa liquid base follow home-cooked Idli Dosa liquid base method To prepare the Milagai Podi Uthappam, bring to temperature a dosa tawa on medium bring to temperature and lubricate it with a little cooking oil.transfer a small ladle full of the idli/dosa liquid base at the center of the cooking vessel, shower some milagai podi on top and splash with some sesame cooking oil.

let it low-boil for about  2 moments.Once the base is cooked and golden brown in colour, flip over and low-boil the other side for another 2 moments.

Once done transfer the  Milagai Podi Uthappam into a serving plate and offer fiery. Prepare the rest of the Podi uthappam likewise. offer the Milagai Podi Uthappam for breakfast, kids lunch box or for a light dinner along with Kadale chutney or Tomato shallot Chutney  or any chutney of your choice for your comforting breakfast.
