Ingredients
500 grams Sardine fish - (mathi
1 cup Shallots - chopped
2 Tomatoes - pureed
1-1/2 teaspoon Ginger Garlic Paste
1/2 Turmeric powder (Haldi)
1 tablespoon Red Chilli powder - (add more if you like more spicy)
1 tablespoon Coriander Powder (Dhania)
1 teaspoon Fennel Powder
1-1/2 teaspoon Black pepper powder
4 Kokum (Malabar Tamarind)
4 tablespoon Coconut Oil
1 teaspoon Mustard seeds
1 sprig Curry leaves
Salt - to taste
Water - as required
Instructions

To prepare Nadan Meen Curry or Kerala Style Fish Curry, sanitize the fish well and cut into pieces.

toss in seasoning and turmeric dusting fragrant element to the fish and let it sit for 15 moments.Then wash the fish again well.

toss in 1 teaspoon of seasoning, 1 teaspoon red chili dusting fragrant element and 1/4 teaspoon turmeric dusting fragrant element.

Rub it all over the fish, place them inside the fridge and leave it to marinade for 30 moments to 1 hour.mildly hot coconut fat in a clay pot.

When fat turns fiery toss in mustard seeds and wait till it crackles.

Then toss in diced shallots and sauté till onions turn pink.toss in ginger-garlic paste and low-boil till raw smell of the paste is gone.toss in tomato puree and low-boil until the puree turns thick and fat separates from the sides of the skillet.mix gently all the fragrant element dusting fragrant element with 1 tablespoon aqua into a thick paste.

toss in this paste into the skillet and low-boil for about 3 moments.toss in 1 cup aqua and bring it to heat to boiling point.

toss in seasoning to palate and continue to heat to boiling point for another 3 moments.Now toss in kodumpuli and heat to boiling point for another 10 to 15 moments until the curry turns a little thick.Now toss in the marinated fish, reduce flame, put a lid on and continue to low-boil on low flame for about 7 to 10 moments or until the fish is cooked well.Turn off flame.

Nadan meen kari is ready to be served with steamed rice.
