200g Rice Noodles
1 tablespoon Sesame Seed Oil
2 Beaten Egg
1 chopped Red Chilli
3cm piece Ginger
450g Prawns
1 tablespoon Soy Sauce
Bunch Coriander
1/2 handful Mint
Zest and juice of 1 Lime
Handful Peanuts
Instructions

prepare the noodles following the pack procedure, filter and set aside for later.

fiery up the fat in a large frying wok and stream in in the beaten egg.

Swirl around the wok to make a thin omelette, prepare for 1-2 mins, then flip over and prepare the other side for 1 min.

Tip out and cut into thin strips.

introduce the chilli and ginger to the wok, shallow fry for 1-2 mins then tip in the noodles, prawns and egg.

Splash in the soy condiment dip and agitate-shallow fry for 1 min more.

Throw in the diced herbs and stream in over the lime liquid and zest, then dust over the diced peanuts and present.
