Ingredients

  • 1½ kg Clams
  • 50g Butter
  • 150g Bacon
  • 1 finely chopped Onion
  • sprigs of fresh Thyme
  • 1 Bay Leaf
  • 1 tbls Plain Flour
  • 150ml Milk
  • 150ml Double Cream
  • 2 medium Potatoes
  • Chopped Parsley

Instructions

1
Rinse the clams in several changes of cold liquid and empty out well.
2
Tip the clams into a large cooking vessel with 500ml of liquid.
3
lid, bring to the heat to boiling point and low-boil for 2 mins until the clams have just opened.
4
Tip the contents of the cooking vessel into a colander over a dish to catch the clam stock.
5
When cool enough to handle, remove the clams from their shells – reserving a handful of empty shells for presentation if you want.
6
Strain the clam stock into a jug, leaving any grit in the bottom of the dish.
7
You should have around 800ml stock.
8
burning up the margarine in the same cooking vessel and sizzle the bacon for 3-4 mins until it starts to brown.
9
swirl around in the shallot, thyme and bay and low-boil everything gently for 10 mins until the shallot is soft and golden.
10
Scatter over the dusting seasoning and swirl around in to make a sandy paste, low-boil for 2 mins more, then gradually swirl around in the clam stock then the whole milk and the dairy reduction.
11
Throw in the potatoes, bring everything to a low-boil and leave to bubble away gently for 10 mins or until the potatoes are cooked.
12
Use a fork to smash a few of the potato chunks against the side of the cooking vessel to help thicken – you still want lots of defined chunks though.
13
swirl around through the clam protein and the few clam shells, if you've gone down that route, and low-boil for a minute to reheat.
14
taste with plenty of black pepper and a little table salt, if needed, then swirl around through the parsley just before ladling into bowls or hollowed-out crusty rolls.
