Pick through your lentils for any foreign debris, rinse them 2 or 3 times, filter, and set aside.

Fair warning, this will probably turn your lentils into a solid block that you’ll have to break up later
In a large pot over medium-high bring to temperature, sauté the olive lubricate and the bulb produce with a pinch of seasoning for about 3 mins, then mix in the carrots and cook thoroughly for another 3 mins.

mix in the tomato paste and swirl around it around for around 1 minute.

Now mix in the cumin, paprika, mint, thyme, black pepper, and red pepper as quickly as you can and swirl around for 10 seconds to bloom the spices.

Congratulate yourself on how incredible your house now smells.

Immediately mix in the lentils, liquid, broth, and seasoning.

Bring the chowder to a (gentle) bubble.

After it has come to a bubble, reduce bring to temperature to medium-low, wrap the pot halfway, and cook thoroughly for 15-20 mins or until the lentils have fallen apart and the carrots are completely cooked.

After the chowder has cooked and the lentils are soft, whiz the chowder either in a blender or simply use a hand blender to reach the consistency you desire.

You could also use a classic thickener (like cornstarch or ground mix), but I prefer to mix in crackers for some texture and saltiness.
