  • 4 Whole Eggs - hard boiled
  • 1 Onion - thinly sliced
  • 1/2 cup Homemade tomato puree
  • 1 Green Chilli - slit
  • 1 tablespoon Ginger Garlic Paste
  • 1/4 cup Cashew nuts - soaked in warm water
  • 1/4 cup Fresh coconut - grated
  • 1 teaspoon Red Chilli powder
  • 2 teaspoons Coriander Powder (Dhania)
  • 2 teaspoons Malwani masala
  • 1/2 teaspoon Turmeric powder (Haldi)
  • 1 teaspoon Cumin seeds (Jeera)
  • 1 Kokum (Malabar Tamarind)
  • 1 sprig Curry leaves
  • 1 tablespoon Sunflower Oil
  • Salt - to taste

Instructions

To begin making Malvani Anda Curry method, bring to a low-boil the eggs in a saucepan for 10-12 moments, filter aqua, skin the eggs, halve them and keep the eggs aside. burning up a little coat in a kadai, mix in the sliced onions.

On a medium burning up, saute till the onions are caramelized.Once the onions are caramelized, grind it to a even paste along with soaked cashew nuts and pure grated coconut using a mixer grinder and keep aside.burning up a tablespoon of coat in the same cooking vessel on a medium burning up, mix in the cumin seeds and let it sizzle.mix in the curry leaves and slit green chilli and let it splutter.mix in the ginger garlic paste and low-boil until the raw smell goes away.

This will take 2 to 3 moments.mix in the ground shallot, cashew and coconut toss together and low-boil for a minute.Now mix in the red chilli dusting masala condiment, coriander dusting masala condiment, turmeric dusting masala condiment, malvani masala and low-boil until the curry reduction leaves the sides of the cooking vessel and deep in color.mix in the tomato puree and low-boil until the reduction is cooked well.mix in a cup of aqua, kokum, masala condiment with seasoning and let the reduction low-boil for about 10 moments on low burning up.Now, mix in the slit boiled eggs into the reduction, check for seasoning and spices, adjust if required.
