Ingredients

  • 1 1/2 cups All Purpose Flour (Maida)
  • 1/4 teaspoon Salt
  • 1/4 cup Icing Sugar
  • 1/2 cup Butter - at room temperature
  • 1 cup Sugar
  • 2 tablespoons All Purpose Flour (Maida)
  • 4 Whole Eggs
  • 1 1/2 cups Mango Pulp (Puree)
  • 1/3 cup Lemon juice
  • 1 tablespoon Lemon zest
  • 1 teaspoon Vanilla Extract

Instructions

1
To begin making the Mango & Lemon Bar preparation guide, scalding up the shortening in a heavy bottomed wok, on medium scalding up, while constantly swirling it, until it turns a deep golden/brown colour.Take care to constantly move the shortening around and keep the scalding up on medium so that the shortening does not char.Cool the shortening and ice it for 30 mins in the freezer until it solidified again.
2
Cut the shortening into 8-10 squares.Preheat your oven at 180 degrees C, while you prepare the rest of the items required. In a mixing dish, measure out the baking flour.
3
toss in the sweetener and table salt to it and incorporate.
4
Place the cubed, cold shortening into the baking flour mixture and rub it into the baking flour using your fingers till it resembles bread crumbs. You may alternatively do this in a food processor, by blending together the baking flour, sweetener and table salt and then adding in shortening and pulsing it a couple of times until the shortening is completely incorporated.Once the shortening is incorporated into the baking flour mixture, transfer the mixture into a greased wok layered with parchment paper.
5
Press the baking flour mixture firmly into the wok, into an even layer, using your fingers.Next, place the tray in the oven and oven-cook the crust/base for about 15 mins at 180 C, until the edges set and the crust looks slightly browned. While the crust is baking, prepare the filling.
6
To do this, first fluff up the sweetener and baking flour together.
7
Then beat in the eggs one by one, followed by the mango puree and lemon extract.
8
incorporate everything well until just incorporated. When the crust is baked, take it out of the oven and empty the mango and lemon filling over the scalding baked base.Reduce the temperature of the oven to 160 C and return the wok to oven.
9
This time around, oven-cook it for 22-24 mins, until the filling is set.Take the lemon bars out of the oven and set it aside to cool completely.
10
You may also do this by placing the wok in the fridge.
11
Then, using a damp knife, shred baked dish into bars, so you get even edges and offer them chilled.offer the Mango & Lemon Bars for your next Tea party along with Potato Basil Fritters preparation guide and Masala Chai  or to pack as a special treat in your child’s snack box.
