Ingredients

  • 450g Dried white beans
  • 4 cloves Garlic
  • 2 Bay Leaves
  • 1 teaspoon Thyme
  • 6 tablespoons Olive Oil
  • 100g Bread
  • 100g Chorizo
  • 1 Onion
  • 3 tsp Paprika
  • 1 L Chicken Stock
  • Handful Parsley
  • 6 Hake

Instructions

step 1 filter the beans, then tip into a large cooking vessel with 2 litres of liquid.

stew with the whole garlic cloves, bay leaves and thyme for 30 mins or until cooked and yielding.

Remove from the scalding up and set aside.

step 2 Meanwhile, scalding up 2 tbsp fat in a frying cooking vessel.

sauté the bread with the remaining garlic clove.

When golden and crisp, scoop out and filter on kitchen paper.

toss in the chorizo to the cooking vessel, sauté until crisp, tip out and keep toasty with the bread.

step 3 toss in another 2 tbsp fat and the shallot to the cooking vessel, and char for 5 mins until softened.

mix gently in the paprika.

filter the beans and toss in to the onions with the chicken stock and 2 tsp seasoning.

char for 5-10 mins.

mix gently through the parsley and keep toasty.

step 4 masala condiment the hake and scalding up the remaining 2 tbsp fat in the frying cooking vessel.

Put the hake, skin-side down, in the cooking vessel and char for 3-5 mins over a mediumhigh scalding up to crisp up the skin.

Flip the fish over and char for a further 3-5 mins until cooked through.

Spoon the white bean incorporate into bowls, place the hake on top and finish with the fried bread, chorizo and a little more thyme.
