  • 400g Lamb Mince
  • 1 Diced Onion
  • 200g Rice
  • 1 L Lamb Stock
  • Pinch Salt
  • Pinch Pepper
  • Splash Olive Oil

Instructions

1 culinary preparation pot-fry the leeks in a small dash of olive fat for a few moments until they start to brown.

2 mix in the onions and mince and pot-fry until everything is browned.

Ensure you keep stirring to prevent the leeks catching and burning.

3 mix in the rice and swirl around together for a few moments ensuring the rice is well blended and coated in any juices.

4 mix in the lamb stock, seasoning and pepper.

Give it a good swirl around and leave it to come to the bubble.

Leave to bubble for 2 moments.

5 Baking stream in the mixture into a large baking tray, place on the bottom self of a preheated oven at 180 degrees.

Leave to oven-cook for up to 1 hour.

The dish is ready when all the liquid is evaporated and the rice is soft.

6 Serving Once cooked turn off the oven and keeping the door open leave the leek and rice oven-cook to cool for 10 moments before serving.
