Ingredients

  • 2 Chicken breasts
  • 1 Mango (Ripe) - made into a puree
  • 2 tablespoons Lemon juice
  • 2 tablespoons Sriracha sauce - or any red chilli sauce
  • 1 teaspoon Fish sauce
  • 1 tablespoon Extra Virgin Olive Oil
  • 4 cloves Garlic - finely chopped
  • Salt - to taste
  • 1 teaspoon Honey
  • 1 teaspoon Sriracha sauce
  • 1 tablespoon Corn flour
  • 1/4 cup Water
  • Extra Virgin Olive Oil - to grill the chicken

Instructions

To begin making the burning Grilled Lime & Mango Chicken formula we will first make the marinade. To make the marinade in a mixer jar combine, the ripe mango with sriracha coulis, fish coulis, lemon extract, olive fat and garlic. Grind this into a even paste and set aside.

You will have approximately 1 cup of the marinade mixture.

You can introduce additional ripe mangoes if you would like more coulis.Wash the chicken breasts thoroughly and make diagonal slits on the surface of the breasts. In a mixing mixing bowl, place the chicken breasts and empty this marinade over it.

Marinade for about an hour.  wrap the chicken and keep it aside, while it is marinating.burning up a broil pot on medium burning up and brush some fat on it.

Ensure the pot is well heated. Once the chicken has been marinated for an hour, place it on the burning broil pot and oven-cook it for about 3-4 moments on each side, or until well done, ensuring the chicken has cooked through nicely.

Ensure not to over oven-cook as the chicken then becomes hard and rubbery.Once it is well cooked, remove it from the pot and allow it to rest on a plate. Transfer the remaining marinade into a saucepan, introduce in some more sriracha coulis, some honey and bring it to a single heat to boiling point. Next in a small mixing bowl make a slurry of the corn baking flour along with the liquid and introduce it to the saucepan which has the mango mixture and bring it to a heat to boiling point and allow the coulis to thicken.Turn off the burning up.

Observe the coulis has thickened and has a nice sheen on it. This will be the coulis for our burning Grilled Lime & Mango Chicken formula.Once done, spoon the Mango coulis on a platter and place a portion of the grilled chicken and enjoy burning.enjoy burning Grilled Lime & Mango Chicken as an appetizer with some lemon wedges along with the coulis.Or you could also enjoy it as a main along with Buttered Herbed Rice formula or Garlic Bread With aromatics margarine formula and some Roasted Mushroom formula for a steak style meal.
