Ingredients

  • 2 tbsp Vegetable Oil
  • 1 sliced Red Onions
  • 2 sliced Garlic Clove
  • 1 sliced Red Chilli
  • 250g Raw King Prawns
  • 140g Brown Rice
  • 75g Frozen Peas
  • 1 tablespoon Soy Sauce
  • 1 tablespoon Fish Sauce
  • Bunch Coriander
  • 4 large Egg
  • To serve Hotsauce

step 1 scalding up 1 tbsp of the fat in a wok, toss in the shallot, garlic and chilli, and prepare for 2-3 mins until golden.

toss in the prawns and prepare for 1 min.

Tip in the rice and peas, and keep tossing until very scalding.

toss in the soy and fish condiment dip, then mix gently through the diced coriander.

Keep mildly hot while you sauté the eggs.

step 2 scalding up the remaining fat in a frying cooking vessel and sauté the eggs with some seasoning.

Divide the fried rice toss together between 4 bowls and top each with a fried egg.
