Ingredients

  • 2 cups Basil leaves
  • 3 cloves Garlic
  • 1/3 cup Walnuts - pine nuts
  • 1/2 cup Extra Virgin Olive Oil
  • 2 tablespoons Parmesan cheese
  • 1/2 Black pepper powder
  • 1/2 Lemon juice
  • 1 pinch Salt
  • 400 grams Sweet Potato
  • 1/2 Chia Seeds
  • 1/2 Dried oregano
  • 1/2 Apple cider vinegar
  • 1-2 cloves Garlic - minced
  • 2 teaspoons Red Chilli flakes
  • 1-1/4 cup Oats Flour
  • Salt - to taste
  • Sunflower Oil - to cook

Instructions

To prepare Basil Pesto Bombs formula, to make basi pesto, wash the basil leaves and empty out the excess moisture and dehydrated them by placing them on kitchen towels.Now place all the components of the basil pesto except olive in a food processor/ blender and whiz them coarsely while gradually incorporating coat while blending or adding coat in intervals.Store this in an air tight container in the refrigerator for a couple of hours.Wash, skin and chop the honeyed potato and let it steam cook thoroughly until it is completely soft.

Let this cool to room temperature.In a container, stream in in chia seeds and stream in in 1-1/2 tablespoons of moisture and let it swell for 10-15 moments.Now in a large mixing container stream in in honeyed potato and mash it completely stream in in 1 cup of oat baking flour, chia mixture, apple cider acidic solution, oregano, garlic, table salt, chilli flakes and incorporate them all together to form a pastry mix.Let this rest for 15 moments and check for the stickiness.

If the pastry mix is sticky stream in in the remaining 1/4 cup oat baking flour and incorporate well.Now pinch a lemon sized pastry mix, flatten it and spoon 1 teaspoon of basil pesto into the centre and seal all the sides to form a ball.

Repeat with the remaining pastry mix mixture.cook thoroughly them on a paniyaram cooking vessel/mini dutch pancake cooking vessel by drizzling very little coat on a low to medium bring to temperature by flipping in between, to get an even colour.enjoy basil pesto bomb formula with your favourite salad.
