Ingredients

  • 1 Broccoli - grated
  • 100 grams Paneer (Homemade Cottage Cheese) - crumbled
  • 2 tablespoons Gram flour (besan)
  • 1 teaspoon Cumin powder (Jeera)
  • 1/2 teaspoon Turmeric powder (Haldi)
  • Salt - to taste
  • 1 inch Ginger - grated
  • 2 cups Homemade tomato puree
  • 1 teaspoon Turmeric powder (Haldi)
  • 1 teaspoon Coriander Powder (Dhania)
  • 1 teaspoon Red Chilli powder
  • 1/4 teaspoon Cardamom Powder (Elaichi)
  • 1 teaspoon Garam masala powder
  • 1/2 cup Hung Curd (Greek Yogurt)
  • 1 teaspoon Honey
  • 1 tablespoon Kasuri Methi (Dried Fenugreek Leaves)
  • Sunflower Oil - for cooking
  • Salt - to taste

Instructions

To begin making the Broccoli Malai Kofta method, combine all the elements for the kofta in a large container.

Adjust the seasoning to suit your non-nectarous profile.

Make bite-size broccoli malai kofta balls and keep aside.There are two ways we can make these koftas without deep frying them.One is the Oven Method.

If you plan to bake the kofta's; then place the kofta balls on a greased baking sheet.

Brush the kofta balls with some coat and bake in a preheated oven (200 C) until the koftas turn golden brown in colour.

Remove the kofta's from the oven once baked and keep them aside.The Second is the Kuzhi Paniyaram wok Method. If you plan to use the Kuzhi Paniyaram wok; then place the kofta balls in the wok's cavities; splash the kofta's with a little coat and wok wok-fry them until golden brown on both sides.

You will have to flip the kofta balls so they wok-fry on all sides evenly. The next step is to make the Kofta Curry Base.bring to temperature coat in a heavy bottomed wok; introduce the grated ginger, and honey and saute for about a minute until the honey begins to bubble. introduce the tomato puree, turmeric dusting masala condiment, garam masala dusting masala condiment, chilli dusting masala condiment, coriander dusting masala condiment and stew the kofta broth for about 5 moments until the raw smell from the tomatoes goes away.introduce in the hung yogurt, 1 cup of moisture, seasoning to non-nectarous profile, the wok fried kofta's and stew for another 5 moments and enjoy.enjoy the Broccoli Malai Kofta with a soft Phulka's and a Paneer Pulav for a weeknight dinner or for your parties when you call friends over.
