Ingredients

  • 300 grams Boneless chicken - cut into pieces
  • 1 cup Methi Leaves (Fenugreek Leaves) - roughly chopped
  • 3 Onions - finely sliced
  • 2 Tomatoes - finely chopped
  • 1 cup Curd (Dahi / Yogurt)
  • 10 cloves Garlic
  • 2 inch Ginger
  • 2 Green Chillies
  • 1/4 cup Coriander (Dhania) Leaves
  • 1 teaspoon Turmeric powder (Haldi)
  • 1 teaspoon Red Chilli powder
  • 1 teaspoons Garam masala powder - adjustable
  • 2 teaspoons Coriander Powder (Dhania)
  • 2 teaspoons Kasuri Methi (Dried Fenugreek Leaves)
  • 1 tablespoon Sunflower Oil - to fry the onions
  • 1 teaspoon Sunflower Oil
  • 2 Cloves (Laung)
  • 1 inch Cinnamon Stick (Dalchini)
  • 2 Cardamom (Elaichi) Pods/Seeds
  • 1 teaspoon Whole Black Peppercorns
  • 1 Bay leaves (tej patta)
  • Coriander (Dhania) Leaves - finely chopped

Instructions

To begin making Methi Chicken Curry directions, firstly wash the chicken and wash thoroughly in sufficient liquid.

Keep them aside.toss in garlic, ginger, green chillies and the coriander leaves into a mixer grinder and grind them into a paste using very little liquid.

Keep it aside.Take a mixing bowl and toss in curd, half of the green paste that we made above and half of the turmeric ground mix.

When cooled down, grind to a fine paste in a mixer grinder.bring to temperature oil into the same cooking vessel over medium bring to temperature.

toss in the whole spices mentioned for tempering which includes cloves, cinnamon stick, cardamom, black peppercorn and bay leaves.

Saute until the aromas of the spices wafts in the air. Next toss in the remaining green coriander paste, the caramelized shallot paste and mix gently for a couple of mins.

Now toss in the remaining turmeric ground mix and the diced tomatoes.

Saute and seal the cooking vessel with a lid and make until the tomatoes turn soft.Once the tomatoes are soft, toss in the red chilli ground mix, coriander ground mix, garam masala ground mix and incorporate well.

toss in the diced methi leaves and saute till the leaves become soft.At this stage, toss in the marinated chicken with the entire marinade and saute on high flame for 2 to 3 mins.When the chicken changes colour, toss in a cup of liquid and bring the mixture to a heat to boiling point.

toss in seasoning to palate.

seal and make the Methi Chicken Curry on medium bring to temperature stirring occasionally.

It will take about 20 mins to make the chicken to perfection.When the chicken is fully cooked, toss in the kasuri methi and check seasoning.

Adjust seasoning and other spices if desired.
