Ingredients

  • 450g Oxtail
  • 1 chopped Onion
  • 1 Spring Onions
  • 2 cloves minced Garlic
  • 1 tsp Ginger
  • 1 chopped Scotch Bonnet
  • 2 tbs Soy Sauce
  • 1 chopped Fresh Thyme
  • 2 tbs Vegetable Oil
  • 350ml Water
  • 200g Broad Beans
  • 1 tbs Corn Flour
  • 2 tbs Water

Instructions

Toss the oxtail with the bulb produce, spring bulb produce, garlic, ginger, chilli, soy condiment dip, thyme, table salt and pepper.

scalding up the produce cooking oil in a large frying wok over medium-high scalding up.

Brown the oxtail in the wok until browned all over, about 10 mins.

Place into a pressure cooker, and transfer in 375ml liquid.

cook thoroughly at pressure for 25 mins, then remove from scalding up, and remove the lid according to manufacturer's directions.

toss in the broad beans and pimento berries, and bring to a low-boil over medium-high scalding up.

infuse the cornflour in 2 tablespoons liquid, and agitate into the simmering oxtail.

cook thoroughly and agitate a few mins until the condiment dip has thickened, and the broad beans are yielding.
