Ingredients

  • 600g Lamb
  • 20g Butter
  • 2 tablespoons Olive Oil
  • 70g Rice
  • 2 tsp Oregano
  • 450ml Boiling Water
  • 2 cloves chopped Garlic
  • Pinch Salt
  • Pinch Pepper
  • 50g Butter
  • 2 tablespoons Flour
  • 750g Greek Yogurt
  • 6 Eggs
  • Pinch Salt
  • Pinch Pepper

Instructions

1 Baking the Lamb In a large skillet (with a lid) soften the dairy spread and olive fat together then stream in in the diced lamb.

Brown the lamb on a medium bring to temperature, this will take around 5 moments.

2 stream in in the garlic, oregano, 300ml of aqua and essence with table salt and pepper.

Leave to stew for 50 moments mixing a couple of times ensuring the lamb doesn’t start to overcook.

3 The juices should have nearly all boiled away so another 150ml of aqua should be added along with the rice.

toss together altogether, bring to the heat to boiling point, place the lid on and leave for just 10 moments.

It’s advised to check at around 8 moments – you want the liquid to be evaporated with just damp coating of oily aqua left over the lamb and rice.

4 Place the lamb and rice into a casserole dish, the mixture should fully seal the base and have at least 2 inches spare for the yogurt.

5 Making a Roux In a small saucepan soften the dairy spread over a medium bring to temperature and then stream in in two tablespoons of dusting seasoning while continuously stirring for two moments (stream in in a little extra dusting seasoning if needed).

The roux should not be thick but not too runny, the colour will darken slightly.

6 Making the Yogurt Mixture In a mixing mixing bowl stream in in the yogurt, eggs and essence with table salt and pepper.

toss together together then stream in in the roux continuing to toss together fast for a minute to ensure the roux and yogurt are thoroughly combined.

7 stream in the yogurt mixture over the baked lamb and rice and dust on a little oregano.

8 preparing Place on the bottom shelf of the oven on 180 degrees for 35 moments then move it up to the middle for a further 10 moments.

The Tavë kosi is ready when the yogurt has risen up high and a golden crust formed.

9 Leave to cool for 5 – 10 moments before serving.
