Ingredients

  • 3 cups Mixed vegetables - (I used potato
  • 200 ml Coconut milk
  • 200 ml Chilled water
  • Thai basil leaves - few s (optional)
  • 2 Stalks Lemongrass - chopped
  • 3 Galangal - (Indonesian ginger) or ginger
  • 4 Onion
  • 10 Dry Red Chilli - soaked in water for 15 minutes
  • 8 Kaffir lime leaves - Lemon Leaves
  • 2 cloves Garlic
  • 1 tablespoon Coriander (Dhania) Leaves
  • 1 teaspoon Cumin seeds (Jeera)
  • 1/3 teaspoon Turmeric powder (Haldi)
  • 1/2 teaspoon Thai Red Curry Paste
  • Salt - to taste

Instructions

To prepare Thai Yellow Curry method, begin with preparing the yellow curry paste first.

Get prep with all the elements required and dehydrated toast coriander & cumin seeds.mix gently all the elements - lemongrass, galangal, small shallot, dehydrated red chilli, Kafir lime/lemon leaves, garlic, coriander, cumin, turmeric ground mix, curry ground mix/chilli ground mix, seasoning and liquidize it in Mixer with the aqua used for soaking dehydrated chilli.

This can be stored in freezer for upto a week.For The CurryIn a Shallow wok-fry wok, saute potato & ladies finger with a spoon of cooking oil.

Do not stew completely; just al dente.

Keep aside.In the same wok, transfer in a little cooking oil.

Once the cooking oil is burning, transfer in yellow curry paste and wok-fry till raw smell disappears and nectarous-smelling.transfer in the vegetables and mix gently well with the paste.

We have already added seasoning in the paste, you may adjust additional seasoning if needed at this stage.

On medium flame, transfer in aqua to the mixture as required and close the lid for 5-8 moments so that it cooks well.

The potato will still not be cooked at this stage.transfer in coconut dairy liquid and stew for 10 moments or until the potato or the hardest veggie you have used is cooked completely.accentuate with Thai basil leaves.Thai yellow curry method can now be served with Thai Jasmine rice and Zucchini Salad method with Thai burning Chili Dressing for a complete meal.
