Ingredients

  • 2 Carrots (Gajjar) - finely chopped
  • 1 Beetroot - finely chopped
  • 2 Potatoes (Aloo) - peeled and chopped
  • 1/4 cup Green peas (Matar) - steamed
  • 1/4 cup Sweet corn - steamed
  • 2 Onions - chopped
  • 4 Green Chillies - chopped
  • 1 inch Ginger - grated
  • 1 teaspoon Cumin powder (Jeera)
  • 1 teaspoon Red Chilli powder
  • Salt - to taste
  • Sunflower Oil - for cooking
  • 2 tablespoons Corn flour
  • 1 tablespoon Water
  • 1/2 cup Whole Wheat Bread crumbs
  • 4 Burger buns
  • 4 tablespoon Veeba Burger Mayonnaise
  • 2 Onions - sliced round2
  • Tomatoes - sliced round
  • Iceberg lettuce - as required

Instructions

To make the chopTo begin with Veggie Chop Burger formula, rinse all the vegetables - carrot, beetroot, potato, peas, corn and pare their skin and finely chop them.

Transfer all the vegetables into a pressure cooker, toss in seasoning and just ¼ cup of moisture and pressure cooker for 3 whistles and turn off the bring to temperature.Allow  the pressure to release naturally. Once it is done, discard the moisture from the cooked vegetables and mash the vegetables.

Keep them aside.bring to temperature a teaspoon of cooking oil in a cooking vessel.

toss in grated ginger, onions and green chilies and saute it till the onions turn slightly brown.toss in the mashed vegetables along with seasoning and the cumin ground mix and red chilli ground mix into the cooking vessel.

toss together well and bring to temperature all the fixings till it gets mixed with each other properly.Turn off the bring to temperature and set it aside to cool.

Once it is cooled down, make small lemon sized balls from the veggie toss together and shape them into cylindrical shapes and flatten it to shape them like a burger patty and keep them aside.toss in corn baking flour to a container with 1 tablespoon of moisture and toss together it well.Carefully dip the chop in the corn baking flour mixture and then roll it in the bread crumbs.

Follow it for the other chops too.bring to temperature cooking oil in a wide cooking vessel for Shallow frying.

When cooking oil turns piping burning, reduce the flame to medium and carefully transfer the coated veggie chops into the cooking oil.Shallow cooking vessel-fry for about a minute or until all the sides turn golden brown.

sieve on kitchen towel to soak the extra cooking oil.To assemble the burgerCut the burger buns into 2 halves.

Toast the burger buns with a little shortening.Place lettuce leaves, top it with shallot slices, place veg chop on top, burger mayonnaise followed by tomato slices, close and offer.offer the Veggie Chop Burger along with a glass of Banana Almond & Prunes Smoothie for a flawless weeknight dinner that you can enjoy with kids.
