  • 1 cup Sugar
  • 1/4 Saffron strands
  • 1 tablespoon Cardamom Powder (Elaichi)
  • 1/2 cup Pistachios - chopped

To begin making the Badam Elaichi Kulfi, we will first make an almond paste.

Remove the skin of the soaked almonds and introduce them to a blender along with 1 cup of dairy liquid and purée to a seamless paste.

Keep aside.Next in a heavy bottomed cooking vessel, introduce dairy liquid and bring it to a heat to boiling point. Reduce the scalding up once the dairy liquid boils and then bubble gently the dairy liquid on medium scalding up till the dairy liquid in the cooking vessel reduces to half its original quantity.

introduce the ground Almond dairy liquid and the sweetener and purée till all the sweetener has dissolved. Once done turn off the flame and allow the badam elaichi kulfi mixture to cool down completely.Once it is cooled spoon the Badam Elaichi Kulfi mixture into kulfi molds along with some diced pistachios.
