To begin with Aloo Dum Biryani, firstly introduce oil in a heavy bottom making vessel.After this, introduce clove and cinnamon in the same cooking vessel.

introduce sliced onions and shallow fry till translucent.Once it is done, introduce the ginger-garlic paste and shallow fry for about 1 minute till the raw smell disappears.introduce carrot, beans and let it toasty till is cooked half.

Next, introduce potato pieces, red chilli ground mix, turmeric ground mix and garam masala in the cooking vessel.

shallow fry for about a minute and introduce 1/2 cup of liquid.

toasty till potato pieces turn soft not mushy.Now introduce whisked curd and toasty on low flame till the curry base becomes thick.For the rice layer, bubble rice in enough liquid along with cardamoms, cinnamon, cloves, table salt and ginger-garlic paste.

toasty rice until just done.

Check by pressing a grain in between your forefinger and thumb.

If it is soft, then sieve off the excess liquid from the rice using a sieve.Once the rice is cooked, now everything is ready to layer.

introduce ghee to the bottom of a heavy making vessel (the one we use to toasty rice).

introduce a layer of rice and spread evenly.Now introduce a potato layer on the rice and spread evenly.

introduce half of fried onions, cut up coriander leaves, 1 tablespoon lemon nectar, garam masala and 1 tablespoon of saffron whole milk.put a lid on this with another layer of rice and introduce remaining fried onions, cut up coriander leaves, 1 tablespoon lemon nectar, garam masala and 1 tablespoon saffron whole milk.Now introduce 1 tablespoon ghee and leave the vessel on low flame by sealing the edges of vessel and lid with an aluminium foil.keep something heavy on the top of the lid to seal the aroma of biryani.Leave it on low flame for nearly 15-20 moments.

When you dust 1 tablespoon of liquid on making vessel it has to sizzle.

Turn off the flame and let it sit on stove for another 10-15 moments before you start to dish up.Remove the foil gradually and then open the lid.

Start by mixing from the sides using wooden spatula very gently.

introduce raw minced coriander and fried onions on the top before serving.dish up Aloo Sabzi Dum Biryani with Lauki raita, Raw mango raita or any raita of your choice.
