  • 3 tablespoons Olive Oil
  • 140g Couscous
  • 225g Vegetable Stock
  • 200g Cherry Tomatoes
  • Handful Mint
  • 100g Goats Cheese
  • Juice of 1/2 Lemon

Instructions
