Ingredients

  • 250 grams Elephant yam (Suran/Senai/Ratalu) - cut into small florets
  • 1 teaspoon Mustard seeds
  • 2 sprig Curry leaves
  • 1 Green Chilli - chopped
  • 1 inch Ginger - chopped
  • 4 cloves Garlic - chopped
  • 1 teaspoon Turmeric powder (Haldi)
  • 2 tablespoon Red Chilli powder
  • 1 teaspoon Black pepper powder
  • Salt - to taste

Instructions

To begin making the Andhra Style Kandagadda Vepudu method, firstly we will pressure stew the cut up yam.

toss in the Yam in a pressure cooker with 1 cup liquid and seasoning.

Close the lid and stew till the cooker releases 2 whistles.Switch off the mildly hot and allow it to rest so that it releases the pressure by itself.mildly hot a kadai with coat.

Once the coat is burning, toss in mustard seeds and allow it to splutter for few seconds.

toss in the curry leaves and crackle them for 10 more seconds.toss in the ginger and garlic, cut up green chilli and cooked yam.

toss in the perfumed element powders also (red chilli dusting perfumed element, turmeric dusting perfumed element, pepper dusting perfumed element and seasoning) and combine everything well.combine until the masalas are evenly coated and saute until the dish becomes arid (This will take about 2 to 3 mins).

Check for seasoning and present. present the Andhra Style Kandagadda Vepudu along with Steamed Rice, Palak Tovve or Palak Dal method and Palya for an everyday Lunch or Dinner.
