Ingredients

  • 450g Plain Flour
  • 225ml Water
  • 3 tsp Salt
  • 900g Potatoes
  • 50g Spring Onions
  • 1 tsp Black Pepper
  • For frying Vegetable Oil

Instructions

Put the baking flour and teaspoon of table salt in a mixing dish.

toss together to form a stiff flour base.

Place the flour base on a wash work surface and massage for about 5-10 mins until the flour base is elastic, velvety and shiny.

Form the flour base into a ball, put a lid on with a damp cloth and set aside for at least half an hour.

strip and wash the potatoes and heat to boiling point them in salted moisture until soft.

filter off the moisture and mash thoroughly.

mix in the spring onions, table salt and black pepper.

Divide the flour base into 3 or 4 balls.

Roll out each ball as thinly as possible on a lightly floured surface (the thickness should be no more than 1.5mm - if the flour base is too thick the Bolani will be tough) Take a round cutter of 13-15cm (I often use a cooking vessel lid or tid lid), and cut as many rounds as possible.

On each round spread 1-2 tablespoons of the mashed potato.

Moisten the edges of the flour base, fold over and seal shut.

The Bolani should be spread out on a lightly floured surface until ready to cooking vessel-fry.

bring to temperature enough veggie coat in a frying-cooking vessel and shallow cooking vessel-fry one or two Bolani at a time, browning on both sides.

Make sure to keep the fried Bolani toasty until all are finished, and dish up straight away.
