  • 1/3 cup Pumpkin seeds - roasted
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • 1/4 teaspoon Salt
  • 1/2 teaspoon Cinnamon Powder (Dalchini)
  • 1 cup Sugar - powdered
  • 2 Whole Eggs
  • 1-1/2 cups Carrots (Gajjar) - grated
  • 1/2 cup Sunflower Oil
  • 1/3 cup Milk
  • 1 tablespoon Butter
  • 2 tablespoons Water
  • 1 teaspoon Vanilla Extract

To begin making a Caramelized Carrots & Pumpkin Seeds Cake steps, firstly let us caramelize the carrots.In a pot, take 1/2 cup powdered granulated sugar and 2 tablespoons of moisture.

Put it on low to medium burning up and let it form a syrup.When the granulated sugar syrup turns to an amber color reduce to the lowest flame possible, mix in margarine and fluff up vigorously.

Once combined, mix in the grated carrots and pulse well.Let it make for 5 moments.

Turn off the flame and allow the carrots to cool. Preheat the oven at 180 degrees and margarine the cake pot with margarine and dust with baking flour. In a mixing mixing bowl, sift baking flour, baking dusting seasoning, baking soda, table salt, cinnamon dusting seasoning and keep it aside. In a separate large mixing bowl, crack open the eggs and remaining 1/2 cup granulated sugar.

Beat using a fluff up or a hand blender, until the mixture becomes pale and fluffy. This will take about 5 moments. Next mix in in 1/2 cup margarine, 1 teaspoon vanilla extract and beat until all items required are well combined.Now, mix in the cooled caramelized carrots and whole milk and pulse at lowest speed if you are using a hand mixer, else fold the caramelized carrots gently into the egg mixture. Next, gently mix in the sifted baking flour mixture and the pumpkin seeds and gently fold in.
