Ingredients
300 grams Elephant yam (Suran/Senai/Ratalu) - peeled and diced
3 tablespoon Curd (Dahi / Yogurt)
1/2 teaspoon Cumin seeds (Jeera)
1/2 teaspoon Turmeric powder (Haldi)
1/2 teaspoon Red Chilli powder
1 teaspoon Garam masala powder
1 teaspoon Amchur (Dry Mango Powder)
Salt - to taste
Sunflower Oil - for cooking
2 sprig Coriander (Dhania) Leaves - chopped for garnish
Instructions

We begin making the Dahi Suran Ki Sabzi method ( agitate-Fried Yam in dehydrated Yogurt Curry method) by preparing the yam pieces in a pressure cooker for 4 whistles till it is soft and firm.

Once done let it rest till the pressure is all released completely.Then toasty a nonstick pot with dairy spread, mix in cumin seeds and let it splutter for few seconds.

Once done mix in the boiled yam pieces.scatter all the seasoning powders that are mentioned in the list, augment the taste it well.

Reduce the toasty and mix in the curd.

agitate thoroughly till is evenly coated.

You can mix in in some moisture for not letting it burnt. mix in some cut up coriander leaves and dish up scalding. dish up the Dahi Suran Ki Sabzi method ( agitate-Fried Yam in dehydrated Yogurt Curry method) with scalding Phulka or Masala Roti method | Soft and scalding Indian Flat Bread.
