  • 2 Cups Water
  • 1 cup Rice flour
  • 1/2 teaspoon Ajwain (Carom seeds)
  • 2 teaspoons Cumin seeds (Jeera)
  • Salt - to taste
  • 2 Green Chillies - finely chopped
  • 1 inch Ginger - finely chopped

To begin making Gujarati Khichu method, we have to first get the flour base for the khichu ready. Preheat a steamer with aqua in it.  Meanwhile, in another pot mildly hot 2 cups of aqua and transfer in ajwain, cumin  seeds along with seasoning, ginger & green chillies.Let the aqua come to a rolling bubble.Without reducing the mildly hot, quickly dust the rice baking flour all over the boiling aqua.

(It is important that you scatter the baking flour all over the boiling aqua) Do not swirl around. Allow the aqua to rise up on its own.

It will begin to moisten the rice baking flour within 30 seconds or so.Using the back of a wooden ladle carefully (so as not to splatter the scalding aqua) and vigorously swirl around the swirl around for a minute.Remove the Khichu from the mildly hot and transfer the Khichu mixture in a mixing bowl. When the Khichu flour base is scalding yet but simple to handle, pinch the flour base in 12 balls of equal size.Make an indent in the centre like that of a doughnut. Transfer these Khichu onto the steamer and steam them for 5 – 7 minutesRemove the Khichu from the steamer and offer scalding.offer Gujarati Khichu method as a good for you evening snack along with a scalding cup of Masala Chai or by itself as a light evening snack.
