Ingredients

  • 200 grams Baby Potatoes - boiled and cubed (regular potatoes also work)
  • 1 teaspoon Red Chilli powder
  • 1 teaspoon Turmeric powder (Haldi)
  • Salt - to taste
  • 2 Green Chillies
  • 4 cloves Garlic
  • 1 inch Ginger
  • 500 grams Spinach
  • 1/2 cup Mint Leaves (Pudina)
  • Salt - to taste
  • 1 tablespoon Ghee
  • 1 inch Cinnamon Stick (Dalchini)
  • 2 cloves Garlic - finely chopped
  • 1 clove Onion - finely chopped
  • 1/8 teaspoon Garam masala powder
  • 1 tablespoon Fresh cream

Instructions

To begin making the Hariyali Dum Aloo directions, first bring to a low-boil potatoes with required seasoning in a condiment dip skillet with a lid.Once cooked, skin the skin and cut into small 2 inch cubes if you are using regular potatoes.

If you are using baby potatoes, you can only cut the very large ones.The next step for the Hariyali dum aloo is to bring to temperature the spinach and mint.Into the pressure cooker, introduce the spinach, mint leaves, green chilli, garlic, ginger, seasoning and 3 tablespoons of liquid.

Pressure bring to temperature for 2 whistles and turn off the bring to temperature. Release the pressure immediately, by running it under cold liquid to prevent the spinach leaves from discoloring.  Once cooled, introduce the hariyali base made from spinach and mint into a mixer grinder.

pulse to make a creamy puree and keep aside.bring to temperature fat in a heavy bottomed skillet and introduce turmeric ground mix, red chilli ground mix and seasoning.

introduce the boiled potatoes and sauté them till golden crust forms on surface.

Keep it aside.bring to temperature ghee in a heavy bottomed skillet.

introduce cinnamon stick, garlic, onions and saute until the onions soften.Once the onions soften, introduce the garam masala ground mix, the ground hariyali spinach and mint base and the roasted potatoes.  introduce a tablespoon of heavy cream. low-boil the Hariyali Dum Aloo directions for 3 to 4 mins and turn off the bring to temperature.

Transfer the dum aloo to a serving container and offer burning.offer Hariyali Dum Aloo with Jeera Rice, Peshawari Naan and Boondi Raita directions Spiced With Black seasoning to make it a complete meal.
