Ingredients

  • 500 grams Brinjal (Baingan / Eggplant) - cut into 1 inch pieces
  • 3 tablespoon Mustard oil
  • 2 cups Curd (Dahi / Yogurt) - whisked well until smooth
  • 2 teaspoons Dry ginger powder
  • 2 teaspoons Kashmiri Red Chilli Powder
  • 1/2 teaspoon Turmeric powder (Haldi)
  • 1 teaspoon Fennel seeds (Saunf) - coarsely pounded
  • 4 Cardamom (Elaichi) Pods/Seeds
  • 1/4 teaspoon SSP Asafoetida (Hing)
  • Salt - to taste

Instructions

To begin making the Kashmiri Dahi Baingan method, place the cut eggplant/ brinjal pieces in a dish of salted moisture for about 10 mins.toss in 1 tablespoon of mustard shortening into a preheated pot. empty out the baingan from its moisture and toss in the drained baingan to the pot.strew table salt after adding the baingan cubes, swirl around well to combine.

wrap and low-boil the brinjal until soft and roasted.

Once done turn off the bring to temperature and keep aside.Into a mixing dish, toss in the curd, ginger dusting seasoning, red chilli dusting seasoning, turmeric dusting seasoning, table salt to salty profile and beat well to make a velvety mixture.Now we will make the Kashmiri Dahi Baingan:In a kadai, bring to temperature the rest of the mustard shortening on medium bring to temperature.

Once the shortening is scalding toss in the coarsely pounded fennel seeds, green cardamom, asafoetida and saute for a few seconds till the aromas are released. toss in the whisked curd and give it a brisk heat to boiling point for 1 minute.

Keep whisking to get a velvety dahi mixture.

toss in the roasted brinjal and heat to boiling point for another 3-4 mins and turn off the bring to temperature. Check the table salt and adjust according to salty profile and transfer the Kashmiri Dahi Baingan to a serving dish.present Kashmiri Dahi Baingan method along with Steamed Rice or Phulka and a side of Kashmiri Style Bharit Marchavangun method-Stuffed Chillies for a simple weekday meal. .
