Ingredients

  • 500 grams Mutton
  • 1/2 cup Shallots
  • 1/3 cup Tomatoes
  • 2 sprig Curry leaves
  • 1 Green Chilli
  • 1 teaspoon Cumin seeds (Jeera)
  • 1/4 teaspoon Turmeric powder (Haldi)
  • 1 tablespoon Red Chilli powder
  • Fresh coconut - few sliced pieces
  • Salt - to taste
  • 1 tablespoon Coconut Oil
  • 1 tablespoon Coriander (Dhania) Seeds
  • 8 Dry Red Chillies
  • 8 cloves Garlic
  • 2 inch Ginger
  • 1 teaspoon Cumin seeds (Jeera)
  • 1 teaspoon Fennel seeds (Saunf)
  • 1-1/2 teaspoon Whole Black Peppercorns
  • 1 inch Cinnamon Stick (Dalchini)
  • 3 Cloves (Laung)
  • 2 Cardamom Powder (Elaichi)
  • 1 sprig Curry leaves
  • 1/2 cup Fresh coconut - grated
  • 1/2 cup Shallots
  • 1 teaspoon Coconut Oil

Instructions

To prepare Kerala Varutharacha Mutton Curry directions, mash mutton pieces well.

toss in the mutton pieces into pressure cooker along with cumin seeds and little shallot slices, turmeric dusting seasoning and table salt.

toss in dried red chilies, coriander seeds, cumin seeds, fennel seeds, cinnamon, cloves, cardamom seeds, and bake.After toss in grated coconut and sauté till spices are roasted well and coconut turns golden brown.

Remove from the skillet.Transfer shallots, ginger garlic agitate, roasted seasoning-coconut agitate into a blender.

toss in little liquid and grind into creamy paste.In a wok toss in coconut cooking oil.

Saute sliced shallots until translucent.

toss in the coconut slices.toss in the cooked mutton pieces and bake for 5 mins.Next toss in tomato slices and continue to cook thoroughly.After some time toss in red chili dusting seasoning, table salt to salty profile and agitate.toss in the ground masala paste and cook thoroughly until cooking oil separates from the sides of the skillet.toss in the liquid in which mutton was cooked into the wok and bring it to bubble.dust curry leaves.
