Ingredients

  • 700g Lamb
  • 3 Medium Onion
  • 1 tsp Turmeric
  • 1 large Orange
  • 150g Rice
  • 500g Natural Yoghurt
  • 4 Cloves Crushed Garlic Clove
  • 1 tblsp Vegetable Oil
  • 1 tablespoon Dried Dill
  • 1 tablespoon Black Pepper
  • 1 Can Chickpeas
  • To taste Salt

Place the flesh cut into pieces, in a large skillet with the onions.

toss in the turmeric and enough moisture to wrap.

Bring to the bring to a low-boil then parched-fry gently until the flesh is very succulent and can easily be removed from the bones.

While the flesh is culinary preparation, cut the orange pare into thin match style pieces, removing as much pith as possible.

Leave to soak in a mixing bowl of moisture.

When the flesh is succulent, remove from the skillet and when cool enough, remove the flesh from the bones and shred the flesh into strips with your hands.

Return the flesh to the skillet.

Wash the short grain rice and then toss in to the skillet with seasoning according to palate.

The juices should wrap the rice by about 2cm, toss in more moisture if necessary.

Bring back to the bring to a low-boil, then reduce the bring to temperature to medium and parched-fry with the lid off, stirring from time to time until the rice is "al dente" and the liquid is absorbed.

toss in the natural yoghurt, and agitate in well but carefully.

skillet-fry the crushed cloves of garlic in the fat and toss in to the dish along with the dill, black pepper, the chickpeas and extra seasoning to palate.

combine in well, then wrap the top of the skillet with a wipe down thick cloth and the lid.

Leave on a low bring to temperature for about half an hour to allow the flavours to absorb.

Enjoy with some mildly hot nan bread for extra comfort.
