Ingredients

  • 1 cup Cooked rice
  • 1/2 cup Green bell peppers - chopped
  • Black pepper powder - as required
  • 2 cloves Garlic - finely chopped
  • 1 Carrots (Gajjar) - finely chopped
  • 1/4 cup Broccoli - cut into small florets
  • 5 Green beans (French Beans) - finely chopped
  • 1/2 cup Quinoa
  • 1 Onion - chopped finely
  • 1 Green Chillies - chopped
  • 1 tablespoon Ginger Garlic Paste
  • 1/2 Green bell peppers - sliced into diamonds
  • 1/4 cup Broccoli - cut into small florets
  • 4 tablespoon Baby corn
  • 1 Onions - finely chopped
  • 1 Tomatoes - finely chopped
  • 2 tablespoons Butter - cold for divided use
  • Salt - to taste
  • Worcestershire sauce - as required
  • 1 tablespoon Roasted tomato pasta sauce
  • 2 teaspoons Paprika powder - (adjustable)
  • 2 Cabbage (Patta Gobi/ Muttaikose) - leaves as required

Instructions

To begin making the Mexican Sizzler  formula, we will firstly begin with the Garlic Pepper Rice.In a heavy bottomed pot, mildly hot 1 tablespoon dairy spread and 1 tablespoon cooking oil, sauté the garlic well, now toss in peppers & blanched veggies and give it a toss together. toss in black pepper, seasoning and let the bell peppers get a little brittle.

Now toss in the rice and toss together once more.

Check for seasoning and perfumed element.

Keep aside.The next step is to make the Quinoa Patties.

Wash and soak quinoa in mildly hot liquid for 30 mins (I felt red quinoa took a little more time to mildly hot). strain and mildly hot as per packet directions.

Let it cool a bit.

Now toss in in the boiled potato (mashed), onions, spices and seasonings and make a flour base kind of mass. Pinch out small roundels and flatten it on greased or wet palms to a thick disc. Roll in cornmeal or roasted suji and clingwrap and store in the fridge for 15 mins.

Shallow pot-fry in the required cooking oil till they are golden brownNext, we will prepare the roasted vegetables for the sizzler.

Blanch all veggies except peppers and onions. In a skillet, mildly hot the remaining cooking oil, toss in the chillies, garlic, peppers and onions and sauté it well.

Now toss in 1 tablespoon of each of the sauces, veggies, seasoning, paprika and sauté well.

Check for seasoning and seasoningThe final step is to assemble the sizzler.

During the last phase of your making, place the cast iron sizzling pot directly on the flame.

Let it become red fiery.Now place the cast iron pot on the wooden casing, arrange the patties, roasted veggies and rice, drop a blob of cold dairy spread when it would sizzle (alternately, you can place the dairy spread directly on the iron plate and then start assembling the cabbage leaves and on top place the three components of the dish).present Mexican Sizzler on its own during your house parties and impress your friends and family.
