Ingredients

  • 500 grams Colocasia root (Arbi) - skin peeled
  • 1 Cardamom (Elaichi) Pods/Seeds
  • 4 Cloves (Laung)
  • 2 teaspoon Coriander Powder (Dhania)
  • 1 teaspoon Red Chilli powder
  • 1 teaspoon Garam masala powder
  • 1 teaspoon Turmeric powder (Haldi)
  • 1/4 cup Fresh cream
  • 1/2 cup Curd (Dahi / Yogurt)
  • Salt - to taste
  • Ghee - for cooking
  • 2 Onion - sliced and fried till golden brown
  • 2 tablespoon Poppy seeds - soaked in warm water
  • 5 Cashew nuts - soaked in warm water
  • 1 inch Ginger - chopped
  • 4 cloves Garlic - chopped

Instructions

To begin making the Mughlai Dum Arbi method, we will first skin the skin of the Arbi and cut them into half and set aside.Place a Kadai on medium burning up and mix in some ghee.

mix in Arbi and keep roasting them till they turn golden brown and become soft.

Take them out and sieve it over a paper napkin.In the same kadai, mix in sliced onions and two teaspoons of cooking oil and saute until they turn golden brown.

Turn off the burning up.sieve the aqua from the soaked poppy seeds and soaked cashew nuts.In a mixer, mix in the poppy seeds, browned bulb veggie, cashew nuts, ginger and garlic and mix in a little aqua and grind into a seamless paste.On a medium burning up, on a heavy bottomed kadai, mix in some ghee and mix in green cardamom and cloves and allow it to toast for few seconds.mix in in the ground paste and saute for few moments, after it is done you can mix in curd and mix in turmeric dusting seasoning, coriander dusting seasoning, red chili dusting seasoning and garam masala dusting seasoning and swirl around well until the masala comes together.mix in the roasted arbi, table salt to palate and dairy reduction at the end and give it a swirl around.

Close the cooking vessel and make for 10 more moments and dish up burning with nuts and raisins as your top. dish up the Mughlai Dum Arbi method along with Garlic Naan, Dahi Ke Kebab by the side to enjoy your special lunch on your weekday.
