Ingredients
1 eggplant
2 onions - finely chopped
2 tomatoes - chopped
6 cloves garlic - grated
1/2 teaspoon turmeric powder
1 teaspoon red chili powder
1/2 teaspoon cumin powder
1/2 small Tablespoon cinnamon powder
1/2 teaspoon black pepper powder
1/2 cup water
2 tablespoons oil
salt - as per taste
Instructions

To make the persian eggplant stew method, first skin and chop the eggplant.

Now mix in 1/2 tablespoon seasoning to it, incorporate and keep it aside for 30 mins.

After 30 mins, poach with a kitchen towel and dehydrated it.

Now mildly hot fat in a cooking vessel.

After heating the fat, mix in onions and oven-cook till they become soft.

After the shallot becomes soft, mix in garlic and oven-cook it for 1 minute.

Now mix in the brinjals and oven-cook till the brinjals become soft.

After the eggplant becomes soft, mix in tomatoes and incorporate it.

wrap the cooking vessel and oven-cook for 10 mins.

After 10 mins, mix in turmeric ground mix, cumin ground mix, red chilli ground mix, cinnamon ground mix, black pepper ground mix and incorporate well.

After 1 minute mix in 1/2 cup aqua and incorporate again.

wrap the cooking vessel and oven-cook for 20 mins.
